Oat So Delicious

I have an excuse for why it's been so long since my last post: College coursework deadlines. I had some Media and Art to catch up on so I've been putting all my attention on that before my blog (which is not what I'd choose to do but...)

But now it's Summer, and I have 10 weeks to blog until my heart's content! So, to kick-start my Summer bloggin', I've got an absolutely delicious and healthy cookie recipe that I have to share! (Warning: they don't last long!)

You'll need:

  • 100g self-raising flour
  • 100g porridge oats
  • 100g margarine/butter
  • ½ teaspoon bicarbonate of soda
  • 100g caster sugar
  • 2 tbsp honey

First of all, heat your oven to 180 degree c, and greaseproof your baking tray with margarine/butter and line it with grease-proof paper (I used tin-foil because I ran out).

Then you need to put the flour, oats and bicarbonate of soda into a bowl and set it to one side for later.

Get out a saucepan and melt the butter, sugar and honey together on a low heat, and once that's melted you simply add it too the oats, flour and bicarbonate and stir it all together to make a cookie mix! (Note: it's normal for the texture to be slightly sticky!)

Simply scoop out desert-spoon sized balls of mixture onto your baking tray, and flatten the tops of them slightly.

Pop them in the oven for 15 minutes and when you take them out, wait 10 minutes or so for them to cool and put them onto a plate for everyone to devour, and try to get one yourself before they all disappear!

They will happily keep for a week in an airtight container and they're best served with a lovely mug of tea! Enjoy!
